If you have not tried a chia pudding - have a go this literally takes 45 seconds to make and is a healthy, yummy, fibre filled breakfast, snack or dessert that the whole family will love.
1 x can coconut milk (440 gms)
1/2 can coconut cream (220gms)
1/3 cup chia seeds
dash of vanilla
Coconut shredded for top
Fresh fruit of your choice about 1/2 cup - blueberries, strawberries, mango, passion fruit, banana - whatever is in season.
Whisk the coconut milk and cream together with vanilla and chia seeds - about 10 seconds
Pour into jars, glasses or just a large container. Drop in fruit per glass or spread through out container. Decorate with shredding coconut. Into fridge to set for 4 -5 hours. Enjoy :)
